Ben's Almond Meal Cheesecake, Version We-Can't-Remember
Don't ask for a recipe; it's different every time depending on what we have and what comes out of Ben's head, but this one is smashingly good.

Just because some people asking the recipe... before I forgot for this batch which I may not 100% as I never follow specific pattern,
ReplyDelete2 Cup Almond meal ( plus enough for cover base of baking tin if you do)
1/2 cup of caster sugar (I often use less than this)
250g cream cheese block
1/2 cup Greek Yoghurt
4 mid to large size eggs.
2 mid or 1 large citrus ( Orange will be good as well as lime or lemon)
Spices of your choice ( Poppy seed, cinnamon, nutmeg in this case)
little bit of salt and vinegar for whipping egg white.

You will need two large bowl and baking tin. Baking tin must be heavily coated with butter with your finger,
Preheat oven to 180C

On one bowl you crammed in on block ( 250g) of cream cheese. ( ricotta or cottage may be another option.)
Add about 1/2 cup of Greek yoghurt (best thickest and creamiest one you can find ) not Greek style.
1/4 cup of caster sugar.
4 egg yolks (4 egg whiles on another bowl)
2 medium size or one large orange (any citrus) zest
1/3 ~1/4 cup juice from those.
mix well but not whip to just make them incorporate.
Add 2 cup almond meal. ( not sure how much if you use almond flower)
Add generous amount of poppy seeds, bit of cinnamon and nutmeg,
Add 1tsp baking powder
Mix them to evenly mixed the almond meal and wets and set it on side.

Place small amount of almond flower in baking butter coated baking tin.
could be creative here, you could just pack on bottom like we did, or could cover the side as well.

On the second bowl with 4 egg whites, whisk it until you see bubbling and add pinch of sea salt and about tsp of vinegar (I use apple cider vinegar, but any thing with light colour).
Whisk more and aim is to make soft peak, whisk doing this slowly add 1/4 cup of caster sugar.

Combine 1/2 of whipped egg white into almond meal mix and folding into. Make it even mix and add another 1/2 and do it same way.
Transfer mixture to baking tin and spread out evenly.

Put in preheated oven on centre lack on electric or low on gas for about 35min.
It will start getting golden on edges - centre may be slightly wobble. .
Place aluminium foil with some perforated hole (with fork) on top as a rid.
Bake further 10min
Check the colour and it would be relatively even golden colour.
Switch off the oven and rest it in the oven for 5 min.
take it out, take the foil off and cool in room temp.
